Don’t hit the storewhen you need a little afternoon treat – bake this fabulous and very
easyApricot, Cranberry andNut Loaf and tap in to your inner baker!
Time for a Treat…
Ingredients
115g of dried apricots, roughly chopped
1 large orange
85g dried cranberries
100g caster sugar
85ml oil
2 eggs, lightly beaten
250g plain flour
2tsp baking powder
A pinch of salt
1tsp baking soda
55g almond flakes
Method
• Preheat the oven to 180°C/160°C fan.
Grease a 9 x 5 inch loaf tin and line with
baking paper.
• Using a vegetable peeler, remove the
rind of the orange and chop finely with
a sharp knife. Place in a bowl with the
cranberries and apricots.
• Squeeze the orange and pour juice into
a measuring jug. Top up the juice with
water until the liquid reaches 175ml.
• Pour the liquid over the dried fruit and
stir in the sugar, oil and eggs. Set aside.
• In a separate bowl, sift the flour, baking
powder, baking soda and salt. Fold the
flour mixture into the other ingredients
in three batches.
• Once carefully mixed, stir the almond
flakes into the mixture and spoon into
the loaf tin.
• Bake the loaf in a preheated oven for
55-60minutes or until a skewer inserted
into the middle comes out clean.
• Leave the loaf to cool for ten minutes,
then slice and serve!
