but, somehow, Malaysian food is not
well covered. Sure you can always find
nasi lemak or laksa in some places, but
you will not find authentic Malaysian
flavours anywhere and Tiger Palm is
proud to be able to present the authentic-
ity to the people on Bali.
Which are you most popular dishes?
Yellow curry chicken, laksa, raw tuna
salad, crispy mamak fried chicken,
crispy lamb ribs and a few more. I think
those dishes are some of Malaysia’s
easiest flavours for beginners. While
our regular guests usually are more
adventurous and tend to try new dishes
every time they visit, first timers or tour-
ists prefers something a little bit familiar.
Do you think travel is important for a
chef to develop skills and learn about
new cuisine?
Definitely. When you know the history
and culture attached to a dish, you will
know how a dish should taste and how
it’s supposed to be presented. I value
authenticity, and by travelling you meet
the people, talk, and learn about their
dishes in their kitchens and most of
the time they don’t mind sharing their
heritage recipes with you.
When you get chance to visit Malaysia,
where are your favourite places to go?
I love Penang, obviously, and I want to
visit the East Coast and Sabah.
If you weren’t a chef, what would you be?
A photo journalist or a war journalist.
What were your initial impressions?
The diversity of the culture portrayed
through the tastes. Malaysia is known
as the mixture of Southeast Asian cul-
tures as well as Indian, Chinese and
a few other cultures. Cultural melting
pots always attracts my attention. I see
Penang as one of the most vibrant region
in Malaysia that represents how rich
Malaysian cuisine is.
Why did you decide to take your
Malaysian food to Bali?
Bali is probably the best place in In-
donesia to easily find restaurants that
offer good food from all over the world
