shares the recipe for a quick and easy homemade vegetarian fried rice.
Ingredients
1. 1 ½ cups long-grainwhite rice
2. ¾cup low-sodiumsoy sauce
3. 2 tablespoons light brown sugar
4. 1 tablespoon rice vinegar
5. 1 tablespoon grated fresh ginger
6. 1 tablespoon canola oil
7. 2 carrots, cut intomatchstick-size
strips
8. 2 cups snowpeas, cut into thirds
9. 2 cups bean sprouts
10. 4 scallions, thinly sliced
11. 4 large eggs, beaten

Directions
1. Cook the rice according to the package directions.Meanwhile, in a small
bowl, combine the soy sauce, sugar, vinegar and ginger.
2. Heat the oil in a large nonstick skillet overmedium-high heat. Add the
carrots and cook, stirring for twominutes.
3. Add the snowpeas, bean sprouts, and three tablespoons of the soy sauce
mixture. Cook, stirring until slightly tender for two to threeminutes. Transfer
to a bowl.
4. Return the skillet tomediumheat. Add the cooked rice, scallions and the
remaining soy saucemixture. Cook until just heated through, one to two
minutes.
5. Push the rice toward the side and pour the eggs into the center. Scramble
with a spatula until set, then stir into the rice. Servewith the vegetables.
