Ingredients
1 cup long-grainwhite rice
¼ cup soy sauce
2 tablespoons honey
1 tablespoon cornstarch
1clove garlic, chopped
¾pound frozen peeled and deveined
large shrimp, thawed
Salt and black pepper
2 tablespoons canola oil
4 carrots, thinly sliced
½bunch broccoli (about 1/2 pound),
cut into small florets
1 small red onion, sliced 1/2 inch thick
Directions
1. Cook the rice according to the package directions. In a small bowl, whisk
together the soy sauce, honey, cornstarch, garlic, and½ cupwater.
2. Season the shrimpwith¼ teaspoon each salt and pepper. Heat one
tablespoon of the oil in a large skillet overmedium-high heat. Add the
shrimp and cook, tossing occasionally, until almost opaque throughout,
for two to fourminutes; transfer to a plate.
3. Add the remaining tablespoon of oil to the skillet. Add the carrots,
broccoli, and onion and cook, tossing, until beginning to soften for
three to fiveminutes.
4. Return the shrimp to the skillet, whisk the soy saucemixture again
to redistribute the cornstarch, and add it to the skillet. Cook, tossing
frequently, until the shrimp are opaque throughout and the sauce is
thickened, one to twominutesmore. Servewith the rice.
