grills and dissects three chefs,
RinRinMarinka, DarrenRobertson
and
TobyPuttock
about their recent culinary journey around Indonesia for
their newtelevision programme.
Tell us a bit about yourselves.
Tobie Puttock:
I have been cooking for 22
years; ten of those spent running kitchens
for Jamie Oliver. I am Australian/British
and I have cooked in Australia, London,
Italy and Switzerland. I have a daughter
named Birdie and my wife is Georgia. I
have my own food brand and a youtube
channel that’s part of Jamie’s Food tube.
Most of all, I like to have fun and I love
snowboarding.
Darren Robertson:
I am a chef from the
United Kingdom originally (but no one’s
perfect). I have a couple of restaurants in
Australia called Three Blue Ducks, one
is by the beach, the other is on a farm. I
surf, cook, travel and love to eat and drink
tea! I live in Byron Bay with my partner
in crime and TV presenter/journalist
Magdalena Roze. We are expecting our
first child this December!
RinRin Marinka:
I’m bubbly yet
moody…a typical artist and very curious.
When and howdid your chef journey
start?
TP:
I started cooking in 1992 to make
money so I could go snowboarding. My
first job lasted about five years and it was
in a little restaurant called Café e Cucina
in Melbourne.
DR:
I washed pots at a seafood restaurant
in the UK. I read a cookbook, became
inspired and decided I wanted to be a
chef. And then things got crazy.
RM:
When I was 7 years old, I made my
very first
Bolu Kukus
, otherwise known
as Indonesian steamed cupcakes and it
inspired me. However, I started studying
at Le Cordon Blue because I was curious
about food and cooking. The inspiration
behind my restaurant “Mar’s Kitchen,”
replacing ingredients with gluten-free and
organic products, is because my dad has
a heart disease as well as diabetes so I
wanted to cook healthy for him.
What is it about Indonesian food that
excites you?
TP:
In a word, it’s the spice. I love chili
and when used properly, it really can
elevate flavors.
DR:
I was first drawn to Indonesia
through surfing trips, but there is some-
